Mayonaise

It is easy to make your own mayonnaise if you have a blender. I am allergic to soybean oil so I use this instead and it is much more flavorful.

 1 Egg, large
 1 Garlic clove
 1 tbsp Lemon Juice
 1 dash salt
 1 cup Vegetable oil (I use sunflower)

Crack egg into blender, add clove of garlic and lemon juice.

Blend until smooth. With machine still running, slowly add oil in a thin stream. Continue to blend until thick. (You may not use all the oil).

Variations

There are many ways to add variety to this recipe.
Add 3-4 Tablespoons of chopped herbs like: chives, parsley, dill, or tarragon
Add a Tablespoon of your favorite Mustard
Add 3 extra garlic cloves
Add 1 tablespoon of Horseradish
Replace the lemon juice with lime juice and add 1 tablespoon sriracha chili sauce.
